The extra virgin olive oil produced by the Zanetti Farm is made exclusively from olives harvested by hand in the Oriane farm in Voltino of Tremosine and brought within very few days to the oil mill for the cold pressing, following the ancient local tradition.
“Cold” refers to the temperature being kept no higher than 27 Celsius degrees during the entire process. The oil then undergoes a manual filtration that ensures the typical bright green colour and an absolute clarity.
The resulting oil has a particular scent, a fruity flavour, a very low acidity, which is no more than 0.2% (0.2 grams per 100 grams, expressed as oleic acid), and is rich in polyunsaturated fat acids. All these features make it suitable for Mediterranean cuisine: Oriane extra virgin olive oil enhances the flavor of each dish, even of a simple Bruschetta.
